Can I keep my home phone number?

Yes! You can continue to receive calls and texts to using your home SIM. Your phone can have several eSIM's (and a Physical SIM, if there is a slot) installed at once.

One SIM can be activated for calls and texts the other for data.

During the setup process you'll be promoted to choose which SIM you'd like to use for Calls and Texts.

Most Travel eSIM's don't support Calls and Texts, although there are a few out there if you do need the additional features. In this case you can activate call texts and data from the same eSIM.

Your primary phone number stays active on your main eSIM. The travel eSIM provides a separate data connection and in some cases local number for your destination, so you can receive calls and texts on your original number while using local data rates.
